2014 Walla Walla Valley Dwelley Vineyard Dolcetto

The 2014 Dolcetto is dark and juicy with soft tannins. It is so thick with delicious fruit the acid is hardly perceptible. The lavender nose is followed by a ripe dark cherry-rhubarb beginning, then a roasted almond mid-palate leading to a strawberry, red-raspberry finish.

Food Pairing and Recipe:

Dolcetto can be enjoyed during the spring and summer months. It is easy to drink, sometimes a little chilled, and paired with grilled garlicky lamb chops and summer veggies (zucchini, sweet peppers, onions, tomatoes, and eggplant) bushed with olive oil, salt and pepper. Sliced new potatoes with sweet butter roasted in foil is a delightful side.

2014 Columbia Valley Sangiovese

We have been crafting award winning Sangiovese since 1999.  We are confident the 2014 edition will also have a medal around its neck after it is scored. It is a delightful combination of 85% Sangiovese, 7% Malbec and 8% Syrah from hand- selected vineyards:  Dwelley, Sagemoor, Seven Hills, Kiona and our Estate Vineyard.

It is a perfectly balanced Sangio with backbone and lovely fruit. It has an appealing dark red color and an inviting nose of leather saddle and roasted chestnuts. The mid-palate of dried black olives introduces a ratatouille ending that does not stop giving.

Food Pairing and Recipe:

This Sangiovese calls out for Spaghetti Alla Putanesca – Whore Style. Many Italians have their own recipe for this aromatic sauce. We start with sautéing one chopped sweet onion, sweet red pepper and two sliced garlic cloves in olive oil. Then we add a dozen sliced dried black olives, four chopped anchovies, one tbsp of small capers, and four chopped small ripe tomatoes. Next we add 1 tbsp of chopped Italian parsley, kosher salt and fresh ground pepper to taste and lots of dried basil and oregano. Add a cup of the pasta water, stir and serve.

2013 Washington State CuvÉe

Walla Walla Vintners is known for our unique skills in blending varietals, vineyards, oaks and AVAs. The 2013 Cuvée is a prime example of our artistic work. All six Bordeaux noble red grapes are in this mix from eleven selected vineyards and then cradled in oak from America, France and Hungry for 19 months. This delicious Cuvée opens with a chocolate covered cherry nose followed on the palate by fig chutney with sweet roasted fresh garden tomatoes and eggplant. The long finish brings to mind herb de Provence on lamb chops. Yum!

Food Pairing and Recipe:

We choose to pair this Cuvée with classic ratatouille crafted with equal parts of eggplant, zucchini, and Walla Walla Sweets. Add an assortment of sweet peppers, fresh tomatoes and six to eight garlic cloves crushed. We peel and seed the tomatoes but do not peel the cubed eggplant. We sauté all of the veggies with quality olive oil, adding salt and ground black pepper to taste and then cook the mixture uncovered for about an hour. Then turn off the heat allowing it cool to room temp as all the flavors marry. We then add fresh chopped basil and bake at 350 degrees for one hour or so until the excess liquid is reduced. Serve and enjoy with a glass of the 2013 Cuvée!

2013 Walla Walla Valley Merlot

This Merlot has power and concentration! It is a full-flavored and well crafted mix of benchmark Walla Walla Valley vineyards—Seven Hills, Yellow Bird, Pepper Bridge, Vintners Estate and Dwelley. The blend includes 89% Merlot, 7% Cabernet Sauvignon, and 4% Cabernet Franc. Miles from “Sideways” would be pleasantly surprised if he tasted this Merlot!

The attention-getting nose of cedar, oak and violet jumps from the glass and takes you to a sweet espresso beginning, a thick middle of wild huckleberry jam and a finish that dances with flavors of caramel, mocha, leather and fresh black Mission fig.

Food Pairing and Recipe:

Make your favorite Mac and Cheese recipe. Make it with lots of butter, cheese and evaporated milk or cream. Toss your favorite salad greens with ranch dressing. Much has been written lately about the health value of red wine and dark chocolate loaded with cacao. To wrap up this simple supper with the Merlot we suggest a Julia Child’s pot de crème or a bar of Ghirardelli intense dark chocolate. OMG!

2013 Walla Walla Valley GSM

This is Walla Walla Vintners inaugural run with GSM. A delicious blend of complementary grapes- 57% Birch Creek vineyard Grenache, 28% Vintners Estate vineyard Syrah and 14% Birch Creek vineyard Mourvedre. Tantalizing aromas of bright red fruit, cherry and raspberry- almost candied- with violet and a touch of vanilla sweetness make this delightful blend an easy drinker. Smooth, velvety and ripe with blueberry, the middle palate is supple and richly layered with more jammy red fruit, black pepper and grilled meat underscored with rose hips and black tea. The gripping finish lasts and lasts. If you enjoy Gigondas or Chateauneuf-du-Pape, this limited production wine is for you- only 170 cases made! Gets yours before the word gets out!

Food Pairing and Recipe:

We think this GSM pairs well with a fricassee of chicken made with white vermouth, capers, tomatoes and Picholine green olives. Enjoy!
